SUMMARY:Control Sulfite and other additives in the Evaporated line process using specialized testing equipment to analyze levels; adding appropriate amounts to meet customer specifications. ESSENTIAL FUNCTIONS: Other duties may be assigned. All of the following are to be performed while adhering to Tree Top operational policies, safety rules, procedures and good manufacturing practices. It is the responsibility of every employee at Tree Top Inc. to report food safety and food quality problems or risks to personnel with the authority to initiate action against these said possible risks. Maintain Appropriate Sulfite Levels Test raw product Sulfite levels Add or dilute Sulfite in system to achieve appropriate level for customer specifications Verify lab specifications Check condition and cut size of fruit as it relates to Sulfite absorption Check QA Tech results on finished product Analyze flume water using Dichromate Notify Lab Tech when supplies run low Notify Lab Tech regarding any lab equipment issues Clean lab equipment used for these tasks Maintain GMPs Inspect machinery for foreign material Maintain cleanliness of cutter deck, de-watering shaker, and holding tank Maintain a clean work area; keep floors swept, brooms, squeegees, etc.; in proper place; empty trash cans/bins as needed Wash equipment as necessary Work where needed on weekly cleanup in Peeling Room Ensure cleaning procedures are followed in proper sequence Use proper cleaning/sanitizing chemical-handling procedures and equipment Check sump room and hammermill regularly to ensure GMP needs are met Check seed traps frequently Empty product waste containers and debris as needed Adhere to GMP standards throughout the entire plant Ensure Food Safety by Following HACCP (Hazard Analysis & Critical Control Points) Maintain personal cleanliness, wash hands frequently, wear hairnet, wear sanitary gloves Do not store chemicals too close to food products Avoid spilling oil or cleaning fluids on food products Avoid cross-contamination Follow color code policy Follow proper procedures, practices, training Verify correct ingredients are being used Do not use contaminated raw materials Be familiar with all process flow diagrams Know all critical control points in all processes; i.e. metal detection Sort out foreign material; i.e. wood, stickers, plastic, etc. Communicate Effectively Check customer specification sheets in lab Check with QA Techs for test results Notify Team Leaders and Supervisor of any problems Notify Mechanics of mechanical problems/issues Consult with crew, Team Leaders, and Moisture Tech Keep Supervisor informed of process needs and changes as required Communicate with sanitation person Exchange information at shift change with other Utility person Monitor Fruit Quality Visually monitor fruit condition Consult with Team Leaders Take pressures on fruit Assist with Raw Grades Maintain Appropriate Levels of Other Additives When Necessary Pump appropriate additives Check levels of additives Adjust level as necessary Work together with Team Leaders and Supervisor to achieve desired results Avoid contamination Assist with Slurry Tanks as Needed Check for spoilage Visually check/monitor levels in tank Rinse and drain empty slurry tanks Pump slurry to slurry truck as needed Complete Paperwork Accurately Record all test results Fill out product usage chart Maintain log of Sulfite levels and usage Turn in Sulfite usage report for each shift Check water
