BYU Asst Mgr/Dept Dietitian in PROVO, Utah

Dietitian

This position's purpose is to manage dietary accommodation including food allergies for the missionaries, employees, and visiting guests of the MTC. This includes reviewing nutritional values for products and disclosing allergens and ingredients in compliance with the FDA regulations. It also includes counseling with missionaries and guests for dietary restrictions/needs, providing allergy training to Dining employees, menu and recipe planning, and special meals employee hiring and training. The dietitian is a member of the MTC cafeteria management team and will work to support daily operations related to the main cafeteria.

What you will be doing in this position:

Provide Foods to Accommodate Dietary Restrictions

  • Review menus  and provide feedback, distribute menu information to students with dietary restrictions
  • Make recommendations to meet dietary needs, create dietary restrictions plans
  • Work with kitchen staff to ensure safe food for those with allergies
  • Coordinate with Purchasing Department to procure food products
  • Coordinate specialized recipes and purchasing of allergen free ingredients among all MTC Dining locations

Nutrition Analysis and Cycle Menu Maintenance

  • Coordinate with chefs and managers to standardize recipes in menu management system
  • Gather nutritional information from vendors and suppliers
  •  Create nutrition labels for new/updated recipes
  •  Verify accuracy of existing labels
  •  Adjust menus to reflect changes   

Nutrition Counseling

  • Meet with missionaries, employees and visiting guests to plan for specific dietary needs and goals for dining on campus
  • Provide individualized menu information to guests based on current menu offerings
  • Facilitate support/focus groups for individuals with dietary needs
  • Offer one on one nutrition counseling services to missionaries and staff on campus

Employee Allergy Training

  • Complete FARECheck Instructor Training certification
  • In conjunction with BYU Dining RDN, teach classes and provide examinations to all full time Dining employees
  • Maintain training records and provide recertification yearly to all full time Dining employees 

Manage Nutrition Specialist Student Employees

  • Complete hiring, training, and raise processes for a team of 12-15 student employees
  • Manage job assignments, team projects, and employee schedules
  • Host BYU dietetic interns (typically 2/year)

General Operation Management of the MTC Dining

  • Attend weekly MTC Dining full-time meetings
  • Take an active role as Manager on Duty on the MTC Dining floor, be visible, be present, create relationships with the guests and staff and make sure that their needs are met within reason
  • Follow all ServSafe and Hazard Analysis Critical Control Point (HACCP) procedures.
  • Monitor maintenance and care of equipment.
  • Manage operation in absence of General Manager and AGM.

What qualifies you for this role:

Education/Experience

Minimum:  

  • Bachelor of Science in Dietetics and CDR Registered Dietitian certification

Preferred:

  • Bachelor of Science in Dietetics and CDR Registered Dietitian certification
  • 1 Year Food Service Management

      Skills, abilities, knowledge, licenses, certifications

  • Must either have completed or be on track to complete Registered Dietitian certification (required)

  • Understanding of nutrition weights, measures, and allergens (required)
  • Counseling skills (required)
  • Knowledge of government mandated nutrition regulations and food safety regulations (required)
  • Proficient in Microsoft Office (Excel, Word) (required)
  • Exceptional people skills (required)
  • ServSafe manager certification (preferred)
  • Experiences with food management and nutritional software (creating cycle menus and recipes) (preferred)
