Description

The Lab Controls Assistant Manager is responsible for assisting the Laboratory Controls Manager (LCM) with managing a dairy research lab.

Principal Duties:

  • Assisting LCM in ensuring that goals and strategies for scientific researchers are met, and acting as liaison between the lab and production

  • Conferring with scientists to plan/direct research efforts

  • Qualifying and validating new analytical equipment

  • Overseeing inventory and ensuring that lab is stocked with functioning equipment and supplies

  • Scheduling preventative maintenance of scientific equipment

  • Tracking and maintaining data and metrics associated with culture performance to ensure product targets are achieved

  • Administering budgets and reviewing/approving purchases; and

  • Ensuring LCM’s lab policies and procedures are implemented/followed to ensure regulatory/safety standards are met

    Schedule and Travel:

    Travel to suppliers and collaborators in TX, WI, OH, Denmark, and France will be required 10% of the time.

    Qualifications:

  • U.S. Doctor of Philosophy (Ph.D.) in Food (Dairy) Engineering or Food (Dairy) Science degree is required

  • Also required is one (1) year of experience in:

  • Dairy microbiology to produce cultured dairy products using typical unit operations, including separation, pasteurization, homogenization, membrane filtration, fermentation, and culture handling

  • Adhering to quality control protocols for production of sanitary bench-top and pilot samples

  • Using state of the art techniques to produce cultured dairy products with unique benefits for flavor, texture, and human health with complex microbial communities, using metagenomic analyses, molecular microbiology techniques, including: dPCR, RT-qPCR, amplicon sequencing, metabolomics, and in silico microbiology

  • Designing experiments, isolation procedures, and biochemical and molecular identification methods to study prebiotics, probiotics (mono and co-culture) and postbiotics

  • Conducting and overseeing biotics characterization by challenge studies, antibiotic resistance assessments, tolerance assays, and employing analytical chemistry techniques

  • Screening for potential health effects through mammalian in vitro cell culture techniques (intestinal and monocytic cell lines), including transport studies, evaluation of membrane barrier, microbial adhesion-invasion mechanisms, and gene expression analyses.
