About Fort Logan:

The Colorado Mental Health Institute at Fort Logan (CMHIFL) is one of two state hospitals serving our community. The vision of CMHIFL is to provide the highest quality mental health services to persons with complex, serious, and persistent mental illness within the resources available. Our mission is to support those individuals in achieving their recovery goals and reaching their full potential. CMHIFL provides inpatient treatment to adult patients, generally between the ages of 18-59. The hospital currently has 138 adult inpatient beds and over six treatment milieus serving civil and forensic individuals. Medical services, occupational therapy, neuropsychological-rehabilitation services, and trauma-informed care services are available for all patients throughout the hospital.

Description of Job

These positions are eligible for shift differential on the weekends.

About this Work Unit:

The Nutrition Services Department provides quality meals and medical nutrition therapy to patients in a mental health facility. Meals meet the nutritional, medical, spiritual, cultural, and mental health needs of the patient population and are prepared in a manner that meets established standards.

About the Position:

This position ensures safe, compliant, and effective completion of food service production within the Nutrition Services Department kitchen, to include meal preparation, cooking, portioning, sanitation, documentation, and work lead duties. All work performed by this position adheres to federal, state, and local regulations, Colorado Mental Health Institute at Fort Logan (CMHHFL) policies and procedures and proper safety and sanitation guidelines. Duties in this position include:

10 hours shifts/shift differential on weekends, This is a lead, essential - support care designated position which may required to work on different shifts as this is a 24/7 facility.

Production Cooking:

  • Prepares regular and modified meals using standardized recipes, written instructions, portion sizes, production sheets, food safety guidelines, and various commercial food service equipment.

  • Assures food is attractive, appetizing, and at the proper temperature.

Work Leader:

  • Responsible for daily shift supervision including assigning tasks, monitoring progress and workflow, checking the product, scheduling work, and establishing work standards for Dining Services III staff.

Sanitation and Document Compliance:

  • Responsible for proper documentation of temperatures (food items, refrigerators, and freezers), production records, cleaning schedules, food safety and sanitation, and any other necessary documentation.

  • Assures that all written documentation and reports from each shift are completed daily.

  • Follows CMHHFL policies regarding utensils/plate/bowl counts, key monitoring, knife inventory, food auditing, operation, and minor equipment service.

  • Ensures all food service equipment is kept in working order.

  • Ensures a clean and sanitized kitchen.

  • Determines corrective action to be taken if food is not at an appropriate temperature.

  • Determines adherence to proper labeling and dating of food and ensures F.I.F.O. practices are followed throughout the kitchen through efficient monitoring to ensure correct menu items are being used and recipes are followed.

Training:

  • Maintains active computer access to complete Cornerstone training and check/review emails.

  • Completes mandatory hospital and departmental training.

Other Duties as Assigned:

  • In the absence of a supervisor, this position will lead the entire shift crew.

  • This includes assigning tasks, monitoring progress and workflow, checking the product, scheduling work, and establishing work standards.

Minimum Qualifications, Substitutions, Conditions of Employment & Appeal Rights

Minimum Qualifications:

Three years (3) of food service experience including cooking and preparation of food and/or working in an occupationally related field, such as work in banquet, catering, etc.

Preferred Qualifications:

  • Experience in food service

  • Certification of ServSafe Class

  • Working in a Hospital or Living Centers

Highly Desirable Competencies:

  • Knowledge of institutional food service procedures and practices,

  • Knowledge of health requirements in the operation of a food service unit,

  • Knowledge of health hazards in food service and the necessary precautionary measures,

  • Knowledge of weights, measures, (e.g., food scales, measuring cups, and spoons), and food measurement techniques.

  • Knowledge of techniques used in mixing food (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).

  • Knowledge of meat and vegetable preparation methods.

  • Knowledge of cooking methods (e.g., frying, deep-fat frying, boiling, or baking).

  • Knowledge of the use of kitchen utensils in serving or portioning meals.

  • Knowledge of food safety related to handling and storing cooked foods, serving and storing temperatures, or reading food thermometers.

  • Ability to read English at the level necessary for interpreting and understanding written recipes, menus, nourishment labels, diet slips, portioning sheets, and policies and procedures.

  • Ability to perform basic mathematics (addition, subtraction, multiplication, and division) as related to calculating or converting units of measure for determining proper amounts of food ingredients for mass food production.

  • Ability to clean, cut, cube, grind, and tenderize meat.

  • Ability to clean, peel, dice, grate, slice, and chop vegetables.

  • Ability to measure food ingredients using measuring scales, cups, or spoons.

  • Ability to mix food items (e.g., gelatin, pancake batter, salad dressing, scrambled eggs, etc.).

  • Ability to boil food items and operate a jacketed steam kettle safely and effectively.

  • Ability to fry food items and operate a grill or tilt grill safely and effectively.

  • Ability to bake food items and operate a gas, rotary, or convection oven safely and effectively.

  • Ability to understand and execute oral and written instructions, interpersonal skills, and teamwork skills

Conditions of Employment:

  • Full Background - Name and fingerprint check, ICON Colorado court database, Medicare fraud database, Reference Checks, Professional License verification, Drug Screen, Trails check (direct contact with children), CAPS

  • Must be 21 years of age or older

  • Must be willing to submit to influenza vaccination or sign a medical or religious exemption document

  • Must pass a pre-placement physical/medical screening: TB Test

  • Must be available for shift work which may require working on different shifts as this is a 24/7 Facility.

  • Use, Handling, or Exposure to hazardous materials (ie. cleaning chemicals and commercial equipment).

  • Must be able to read, write, speak, and understand English.
