Ebenezer is looking for a Culinary Director to join our team! This role is responsible forthe coordination of the Food & Nutrition Services Department in our Skilled Nursing Facility in Bloomington, MN. Great experience and opportunity for further growth within the organization!

Responsibilities/Job Description

Menu development

  • Plans and developsvariousmenusthrough Optima Solutions programin compliance with current regulations/requirements.

  • Makes substitutions and revisions as needed to accommodate specialdiets.(ensure all changes are signed off by RegisteredDietician)

  • Solicits ideas from residents (via Resident Council) and staff.

  • Listens to concerns and responds professionally and appropriately.

Budget planning, record keeping and billing.

  • Understands the budget process as itrelates to the department.

  • Maintains necessaryrecords todeterminestaffing levelsand financial requirements for the next year.

Plans and administers department budget with the Administrator.

  • Billsother departments and visitors asdeemedappropriate.

  • Maintain records on meal census,menusand food costs.

  • Send corporate monthly reports.

  • Submits billsfor payment using proper codes and enters them into accounts payable forbudgettracking.

  • Assurescredits are received.

  • Ability to process payroll electronically.

Ability to plan direct and problemsolve activitiesofthedepartment.

  • Establishes departmental regulations and procedures in conformance with government regulations and company standards for organization of supervision of nutrition services.

  • Inspects work habits,storage and serving areastodeterminethatoptimalsanitation practices and direction governing nutrition services are followed.

  • Meets emergency needswhen there is a lack of food,staffor natural resources.

  • Review and continually update department policy and procedures in compliance with Ebenezer guidelines.

  • Establish yearly departmental goals and approaches.

  • Establish effective relationshipswith other managers and theirstaff and other resident centered services to provideoptimalresident care.

  • Assistwith coordination/planning/implementing interdepartmental activities suchas Therapeutic Recreation, Resident Council, Holiday meals, outings such as picnicsandotherspecial events.

Food Service Operations/Sanitation/Safety

  • Audits serving areas, kitchen, kitchenettes, dining rooms and dish rooms for sanitation & regulatory compliance.

  • Ensures storage areas aremaintainedappropriately.

  • Adds & updatesMaterialSafety Data Sheets as needed

Hires &SupervisesFood& Nutrition Services Staff

  • Ability to exercise supervisory responsibility oversubordinates.

  • Interview and makes final decisions on whether to hire job applicants for the department.

  • Properly enforcesdisciplinary policies through preparation and issuance of corrective action. Works with Human Resourcesregardingdisciplinary suspensions and discharges.

  • Maintainsgoodworking environment by effectively addressing grievances.

  • Prepares, issues and signs performance evaluations.

  • Develops work schedules and assigns/ approves overtimewhiletaking into accountPPL requests.

  • Ability to communicate clearly and accurately, verbally and in writing.

  • Assigns employees to work according to the facilities personnel policies and procedures.

  • Approves or deniesvacationrequests.

  • Conducts meetings/in-service with team members

  • Solicits ideas from staff.

  • Contributes to facilities positive employee relations environment by expressing appreciation of employees, by treating them with dignity and respect, and by answering questions or resolving complaints whenever possible.

  • On call24/7 for departmental needs and staffing.

Preceptor for Students

  • Directly/indirectly supervises students in the facility for their field experience hours.

  • Help the students plan the experiences and projects

  • Reports on students learning experiences to the school of choice instructor by reviewing and assigning lessons.

Performs other duties as assigned and directed.

  • Ability to answer phone and write down and verbally communicate the requests.

  • Fills in shifts as needed.

  • Assistswith events as needed.

Qualifications

Required:

  • Vocational/Technical training or Associate Degree

  • 1 or more years of previous experience

  • Approved Food Sanitation Safety Course. ( We a ccept Food Sanitation Safety Course from the following companies)

  • Serv Safe

  • Always Food Safe

  • TAP Series, LLC

Preferred:

  • Bachelor's Degree: Registered Dietician and/or related field.

  • Supervisor & institutional cooking experience

  • Purchasing experience
